Home-Made Boston Baked Beans

Ingredients

  • 2 cans of Cannelli beans
  • 300-500gms Double smoked Speck or bacon bits
  • 2 cloves of garlic
  • 1 onion chopped, finely
  • 1 jar of passata
  • 2 cups chicken stock
  • 1 tablespoon brown sugar
  • ½ cup treacle
  • ½ teaspoon cloves
  • 3 bay leaves (dry)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon mustard

Method

  1. Chop up speck (Bacon bits) and roast in the at 180* oven for 15-20 minutes.
  2. Wash Cannelli beans
  3. Put all ingredients into a slow cooker and leave for 6-8 hours

OR – Cook in an oven at 95°C for 5-6 hours (checking every hour) and serve on toast
